Quick & Affordable Recipe

Hi my name is Erin Vesey (they/them). I am the owner of Detroit Vesey's a community-centered cycling cafe in Los Angeles serving elevated and fresh comfort food. We focus on providing space for folks who are a part of the LGBTQ+ community, cyclists of all kinds, and the local neighborhood of the DTLA Arts District.


I created a quick and affordable recipe to share with you all.


Twice Baked Potato

2 potatoes

1 tbsp salt

2 tbsp canola oil

1/4 cup cheese (your choice)

3 tbsp sour cream

2 tbsp butter

Bacon

Chives


Instructions

  1. Roll potatoes in salt and canola oil

  2. Bake at 375 for 30 min or until medium soft

  3. Let potato cool

  4. Dust off extra salt and cut potato in half

  5. Scoop out inside and set skins aside

  6. Mash the inside of the potato and mix the remaining ingredients into the potatoes

  7. Fill potato skins with mash potato mixture

  8. Cool and store until serving

  9. Cook potato at 375 for 15 min garnish with chives.

Chef Erin Detroit Vesey was inspired to recreate the community that they experienced on AIDS Lifecycle, a 545-mile bike ride from San Francisco to LA that raises funds to fight HIV/AIDS and the stigma, where everyone is welcome to participate and work towards a common goal. Come share a table with us and help nurture and grow our communities! Detroit Vesey's will be a year-round space that will hold those same values for those on and off the bike.
